- Prep the greens: While the turkey legs are simmering, remove any large stems from the greens. Fill a sink with at least 12cm / 5 inches of water and wash the greens thoroughly. Swirl them in the water, then let them sit for a few minutes to allow dirt to settle at the bottom. Drain and chop the leaves in half. (Weigh the greens after stemming but before washing.)
- Cook the greens: Once the turkey legs have simmered, add the greens, salt, and sugar to the pot. Reduce the heat to low, cover, and let them simmer gently for 45 minutes, stirring every 10–15 minutes.
